《中国酿造》创刊于1982年,是由中国商业联合会主管,中国调味品协会和北京食品科学研究院共同主办,国内外公开发行的综合性学术期刊,系我国传统酿造食品领域具有广泛学术影响力的中国自然科学类核心期刊,主要报道酿造学科领域最新研究成果和研究动态,内容涵盖食品微生物、食品科学与工程、生物科学、生物工程、发酵工程、酿酒工程、酶工程、基因工程等诸多领域。《中国酿造》重点报道传统酿造食品领域新技术、新工艺、新进展,内容涉及微生物酿造机理揭示,风味物质组成解析,优良发酵菌株筛选,代谢调控及品质提升,智能化、数字化生产装备开发等关键技术研发成果。

Journal Introduction
Founded in 1982, China Brewing is supervised by China General Chamber of Commerce and sponsored by China Condiment Industrial Association and Beijing Academy of Food Science. China Brewing is a comprehensive academic journal issued at home and abroad, it is the core journal of natural science with extensive academic influence in the field of traditional brewing food in China. China Brewing publishes the latest research achievements and trends in the brewing field, including food microbiology, food science and engineering, biological science, biological engineering, fermentation engineering, brewing engineering, enzyme engineering, genetic engineering and many other fields. China Brewing focuses reporting on the new technologies, new processes and new developments in the field of traditional brewing food, including the revelation of microbial brewing mechanism, analysis of flavor components, screening of excellent fermentation strains, metabolic regulation and quality improvement, and the development of intelligent and digital production equipment, and other key technology research and development achievements.
Aim and Scope
To comprehensively report the latest research results of brewing from multiple perspectives, levels and fields, promote the essence of brewing culture and build an authoritative academic platform.
Disciplinary orientation
The title mainly reports the achievements of national, provincial and municipal key scientific research projects in brewing and related disciplines, as well as the cutting-edge theories, key technologies and development and application of brewing and related disciplines. Focusing on the development direction of brewing industry, it pays attention to the combination of traditional technology and modern technology, and concerns the new process, new technology and new equipment of brewing and related industries.
